Happy Friday, everyone! I have a great recipe for you today, and it’s perfect for a weeknight meal. If there is one thing I crave all year round, it is cornbread. It’s perfect as a Thanksgiving side dish, but it is also great on top of a cup of chili or in the middle of summer! As we embark on summertime and all of the picnics that come along with it, I can’t help by crave cornbread. I love that it is so versatile, and I love that you can spice it up however you like!
This recipe is my ode to cornbread. Oh sure, the pork tenderloin is a nice addition, but the cornbread stuffing is what makes this dish shine. I used a store-bought cornbread for this cornbread stuffing because my local grocery store makes a great one, but you can easily whip up a batch of it from a box if you need to.
As you whip up your weekly menu plans for this week, make sure you add this roasted lemon pepper pork tenderloin with cornbread stuffing to the list.
