I feel like I have been posting a lot of donuts, dips, and fried foods lately. Not that it makes me sad or anything. These are definitely the types of food that I gravitate towards, but I thought I should lighten things up a bit; and I’m starting with this oven roasted salmon with spring pea parmesan puree!
Now, salmon and I have had quite the on again, off again relationship. I went through a very long period in my life where I absolutely despised salmon. I tried to like it. I even forced myself to eat it because I knew about it’s crazy healthy benefits, but it was hard. I just didn’t like the taste of it at all. I think I blame this on the first time I ever had salmon. It was the pink-injected crap that for some bizarre reason you can STILL find at the grocery store. It was fishy and basically the most disgusting thing I ever put in my mouth. It took me about 10 years to try salmon again, and even then I wasn’t fully on board.
I eventually came around though, and while I still don’t go crazy for salmon, I do enjoy it once in a while. I will only eat certain types of salmon (and there are like two), and it has to be that specific or else all of the old fears come rushing back.
One way I really enjoy eating salmon, and this should come as no surprise, is when it’s slathered in honey and butter. This is why I absolutely love this oven roasted salmon. Although there is some butter involved, this salmon recipe is actually quite light. I’ve paired it with a spring pea parmesan puree and the result was pure magic! Bring a large pot of salted water to a boil. Have an ice bath ready. Pour the peas into the boiled water and boil for about 45 seconds or until bright green. Drain immediately and transfer the ice bath. Once cool, drain and add to the bowl of your food processor. Also add the ricotta cheese, sour cream, lemon juice, parmesan cheese, parsley and mint. Pulse 5-6 times or until broken apart. With the food processor running, add the extra virgin olive oil and continue pureeing until it comes together. Transfer the puree to a bowl and season with salt and black pepper to taste. Cover and refrigerate until you are ready to serve.
In a small saucepan, melt the butter. Once melted, stir in the honey, lemon juice and garlic. Remove from heat and set aside.
Season the salmon with salt and black pepper and then dredge each filet in the flour. Brush the butter mixture onto each filet. Set aside.
Heat the olive oil in a large oven-proof skillet over medium-high heat. Add the salmon filets and sear on both sides until brown. Transfer the skillet to the oven and cook until the salmon is fully-cooked through, about 10 minutes. Remove from heat and let rest for just a minute. Drizzle the remaining butter sauce on top.
