Good morning everyone!! I’m sharing this recipe for Almond Chicken Mushroom Casserole over on The Melrose Family today! I totally know what you guys are thinking. I’ve been kind of obsessed with casseroles lately. I think it’s because we have been on kind of this Thanksgiving leftovers roll. I mean Thanksgiving leftovers and casseroles pretty much belong in the same sentence. Don’t they? Welp, this recipe isn’t a Thanksgiving leftovers recipe, but it definitely is a casserole. And one of my FAVORITE casseroles ever.
There are few things in this world I love more than chicken and mushrooms. The two just go together whether it’s in a casserole, or a risotto, or a soup. They just belong together. This casserole is a spin-off of one I make all of the time for Zach and I. In the traditional recipe, the casserole is just a combination of wild rice, mushrooms and chicken breast. This casserole is a little bit different. It is loaded with so much flavor and drenched in a delicious, rich and creamy sauce! Oh, and did I mention the finished product is dolloped with fresh burrata. You guys…it’s a match made in heaven.
