Sorry it has been so long y’all. Traveling took a lot more out of us than we thought! I forget how long the journey back from Colorado to Pennsylvania actually is. It took us about two days to recover and then there was that whole running a marathon thing for Zach this morning, but all in all, it was a great trip! We made some great dishes to save us some money on eating out. They were all fabulous and kept very well in a cooler! I like the idea of this post because it’s a money saving, delicious alternative to eating on the road at those pesky fast food restaurants.
We knew the trip from Boulder, CO to Reading, PA would be a long one, but we didn’t know it would be so eventful. I’ll enlighten that one on you later. We were prepared for it though. Not only did we bring the essentials, as in numerous 4 packs of Izze, cheese (yes we bring cheese on our car rides – it’s our favorite snack!), Hansens, and chocolate; but we brought some great lunch and dinner options so we wouldn’t get bored =).

We knew we had to keep it cool. We didn’t know if we would have a way to heat up our food, and who knew if the hotel would have a microwave. We made an unbelievable chicken salad. Actually, we made a chicken salad times 2, since Zach isn’t a huge fan of grapes. It’s filled with delicious “cashewness,” and the freshly cooked chicken breast made all the difference.
Our egg salad was pretty traditional, but we knew we had to throw some kind of meat into the mix. We went with pancetta. This was the perfect substitution for bacon and made that boring egg salad recipe into something amazing. Our third recipe was a cold pasta salad. This dish is vegetarian and could be made vegan if you eliminated the mozzarella. It’s hearty and full of those essential energy balls, known as carbs. It was eventually tossed in a homemade balsamic vinegar dressing that was to die for.

Of course, we brought a loaf of Rudi’s to make these bad boys into a sandwiches, minus the pasta salad, which would just be weird. In addition, we had on hand all of the essential sandwich toppings: lettuce, tomato, mayo, etc.
Over the next couple of days, I will be sure to provide you with these recipes. They are perfect for a car ride, a picnic, or a tailgate. Our trip in general, well let’s just say, very interesting. We really appreciated the 75 mph speed limit in the western states, and learned to hate the fact that East Coast states rarely go above 65 (on a good day). We were prepared though, and I really think Cilantro never wants to ride in a car ever again.
