This is a recipe that I came up with a long while back that actually started as just a “Surprise” cookie. It has since been transformed and modified into many different forms and here today, we bring to you the “Triple Surprise” version of this colossal chocolate chip cookie. The story behind this cookie stems from a small dilemma that I have had for nearly my entire life: I love peanut butter cookies and chocolate chip cookies. So, I thought, why not combine the two!? The “Surprise” cookie was born as just a chocolate chip cookie sitting on top of a peanut butter cookie, baked together to make one amazing cookie. The doughs are just the way I like them, lots of brown sugar and vanilla and then tons of peanut butter and chocolate chips. Unfortunately, as a result, these cookies are not low in calories. But, that does not mean that you cannot just break off a piece or two and indulge in this delicious treat!
So, the idea behind the additional surprise originates from my liking for all things sweet and chocolaty. Also, growing up, I could not wait for my Mom to bring home York peppermint patties from the store. Yes, that means that I decide to pack some York peppermint patties inside the cookies. They are smashed between the two cookie does to give you the second surprise. Why stop at two surprises? No no no. I decided to take this one step further and add a third surprise in the form of Nutella. My inspiration for this addition comes from my love for the combination of peanut butter and Nutella . . . yum! So, a healthy layer of Nutella on the peanut butter cookie dough can’t hurt? No. And, after all, it serves a practical purpose too since it helps hold the York peppermint patties in place while you smother the chocolate chip cookie dough on top.
These cookies are huge and are often a challenge to finish alone and thus are great to break out and share with friends and family. However, make sure that you are aware of any food allergies that your friends or family may have since the peanut butter is hidden! Moreover, since these cookies are so large, they will likely last for a week or so in your house (or a day if you are me). To keep them soft and fresh each and every time you break into them, just stick a piece of white bread in a resealable bag with the cookies. The bread will become hard over time and the cookies will stay nice and soft. Don’t have cheap white bread on hand? Feel free to use an apple slice but be careful to keep the apple from touching the cookies or else you will have apple tasting cookies.

Triple Surprise Chocolate Chip Cookies
Ingredients
- 3/4 cup butter (softened)
- 1/4 vegetable shortening
- 1 1/2 cups light brown sugar
- 1/2 cup white sugar
- 2 eggs
- 1 1/2 cups chunky peanut butter
- 2 teaspoons vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter (softened)
- 1 1/2 cups light brown sugar
- 1/2 cup white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 teaspoons hot water
- 1 tablespoon milk
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups chocolate chips
- 12 ounce bag mini York peppermint patties
- 1 cup Nutella
- Cooking spray
Instructions
- First we will make the peanut butter cookie dough. In a stand mixer (or in a mixing bowl using a hand blender), cream the butter and shortening. Add the light brown sugar and white sugar and continue mixing until combined. Add the egg yolks to the creamed sugar and mix until evenly distributed. Add the peanut butter and vanilla extract and mix for 1-2 minutes. Add the baking soda and salt. Slowly add the flour, 1/2 cup at a time with the mixer on low. After all of the flour is added, the dough should come together, away from the sides of the bowl but still be a bit tacky. Transfer to a mixing bowl and set aside.
- Next you will prepare your chocolate chip cookie dough. In a stand mixer (or in a mixing bowl using a hand blender), cream the butter. Add the light brown sugar and white sugar and continue mixing until combined. Add the egg yolks to the creamed sugar and mix until evenly distributed. Add the vanilla extract, hot water, and milk and mix for 1-2 minutes. Add the baking soda and salt. Slowly add the flour, 1/2 cup at a time with the mixer on low. After all of the flour is added, the dough should come together, away from the sides of the bowl but still be a bit tacky. Transfer the dough to a mixing bowl and add the chocolate chips. Carefully fold the chocolate chips into the dough until they are evenly distributed. Set aside.
- Now start forming your cookies. Preheat the oven to 375 degrees F. Unwrap the York peppermint patties and cut each one into four wedges. Spread about 3 tablespoons of the peanut butter cookie dough into one hand to make a 2.5 inch circle. Using a butter knife, spread a teaspoon of Nutella on the peanut butter cookie dough. Place 3 York peppermint patty wedges on the Nutella. Spread about 3 tablespoons of the chocolate chip cookie dough into a 2.5 inch circle and place on top of the rest of the ingredients. Place the cookies on a well-sprayed cookie sheet and push the edges of the chocolate chip cookie dough down over the sides of the peanut butter cookie dough so that only the chocolate chip cookie dough shows. Bake for 12 minutes. Let sit on the cookie sheet for a minute before transferring to a cooling rack to set for about 10 minutes. Once cool, move the cookies to resealable bags and place a small piece of white bread in each bag to keep the cookies soft and fresh!
- To serve, cut the cookies in half and top with a mint leaf or two!
